Spicy Mexican Eggs
Tried this amazing recipe by Gordan Ramsay and is a big hit in my house. We love weekend brunches and mexican is our favorite cuisine. This spicy mexican eggs will make your day as they are super quick to make and delicious too. This recipe is made with all those ingredients which you will always have in your pantry.
Ingredients :
- 1 chopped medium sized red onion
- 1 chopped Jalapeno
- 1 thinly sliced garlic
- 1 inch finely chopped garlic
- 1 tbsp olive oil
- Fresh pepper with grinder
- 1 tsp roasted cumin seeds
- 1 canned tomatoes
- 1 canned black beans
- 1 oven proof vessel
- 5-6 corn tortillas
- 6 eggs
- Fresh shredded cheese
- 1 tsp chili flakes
- Cilantro chopped
- Salt to taste
Method:
Take a nonstick pan. Add olive oil to it. Let it heat and add cumin seeds. Let the seeds splutter and then add onions, jalapeno and garlic to it. Sauté it till the onions turn golden brown. Now add canned tomatoes to it. Cook it till it forms a paste. Drain the water from the black beans and rinse it with running water. Add these black beans to the tomato paste and let it cook for 1-2 mins and then turn off the heat. Let it simmer for few minutes. Now take oven proof pan and grease it well with olive oil. Cut the corn tortillas into half and stick them to the walls of the oven proof dish and place one in the middle. Now add the tomato paste to the center of the dish and crack 6 eggs over it. Sprinkle shredded cheese generously on top of it with fresh grounded pepper and salt. Bake it at 350-degree F for 20 mins. Remove it from the oven. Garnish with some chopped cilantro. Your spicy Mexican eggs are ready to serve!! Enjoy this dish for brunch or even lunch. I love it as a Sunday brunch dish.
