Paleo Sesame Chicken
Ingredients:
- 4 tbsp avocado oil
- 1.5 lbs. chicken thighs cut and cubed
- Kosher salt
- ¼ cup arrowroot starch
- ½ medium yellow onion – diced
- ½ medium red bell pepper – diced
- ½ medium green bell pepper – diced
- 2 cloves garlic finely chopped
- 1 thumbnail sized fresh piece of ginger finely chopped
- 1/3 cup coconut aminos
- 1 tbsp rice wine vinegar
- 1 tbsp honey
- 3 tbsp sesame oil
- ¼ tsp freshly cracked pepper
- 1 tsp sesame seeds – for garnish
Method:
- Preheat a wok for few mins. Add avocado oil to it. Let it heat for few minutes.
- Lightly season chicken pieces with salt and arrowroot starch. Toss until completely coated.
- Fry chicken pieces in hot oil in batches. Cook it until golden brown on both sides. Transfer the chicken to a plate.
- Now to the same wok, add onion, red pepper and green pepper with garlic and ginger. Cook until the onions are slightly translucent.
- Add coconut aminos, rice wine vinegar and honey. Stir fry until combined well. Add fried chicken pieces to it with some sesame oil, black pepper, sesame seeds and salt to taste if you need.
- Transfer the chicken to a serving platter, season it with sesame needs and its ready to serve. Enjoy!!
