Paleo and Gluten Free Gingerbread Cookies

Ingredients:

- 2 cups almond flour

- ¾ cup coconut flour

- ½ cup coconut sugar

- ½ cup melted butter

- 2 eggs (room temp.)

- 1 tsp vanilla extract

- ½ tsp baking soda

- 2 tsp ground ginger

- 1 tsp cinnamon

- 1 tsp all spice

- ½ tsp salt

Method:

- Preheat oven to 350 degree F. Line a large baking sheet with parchment paper.

- In a large bowl, whisk together melted and cooled butter, coconut sugar, eggs and vanilla extract. Whisk everything well.

- Take another bowl. Add almond flour, coconut flour, baking soda, spice and salt. Mix all the ingredients well.

- Add the dry ingredients over wet ingredients. Mix with a spatula until a dough is formed. Let the dough rest for few minutes.

- Place dough on a parchment paper and roll it out on a flat surface till its approximately ¼ inch thick.

- Use cookie cutters to cut the dough into desired shapes and then place on your prepared baking sheet about an inch apart.

- Bake for 8-10 minutes until golden brown. Allow the cookies to cool for 5 minutes and transfer them to a wire rack. Cool it for alteast half an hour.

- Frost it or decorate them with some icing and enjoy!!
