Paleo and Gluten free Apple Walnut Cake with Vegan Carmel sauce
Ingredients:
For the cake:
- 2 cups almond flour
- ¾ cup coconut sugar
- ½ cup coconut oil
- ½ cup arrowroot starch
- 1 tsp all spice powder (whole foods)
- ½ tsp cinnamon powder
- ½ tsp nutmeg powder
- 2 tsp cocao powder
- 1 tsp vanilla extract
- 3 eggs
- 2 egg whites
- 1 tsp baking soda (gluten free)
- 1 cup peeled and grated apple
- ¾ cup roasted walnuts
- Pinch of salt
For the sauce:
- 1 can coconut milk
- ½ cup coconut sugar
- 2 pinches of salt
- 1 tsp vanilla extract
Method:
- Preheat oven to 375 degree F. Take a large bowl, add 3 eggs and 2 egg whites to it. Beat it well with a hand mixer. Add coconut sugar slowly and beat again. Beat it until sugar dissolves. Add coconut oil and vanilla extract and beat well until everything is mixed well.
- Take another bowl, add almond flour, arrowroot starch, all spice powder, cinnamon powder, nutmeg powder, cocao powder and baking soda. Mix well.
- Now add wet ingredients over dry ingredients and mix well until all the ingredients are completely integrated. You can use the hand mixer to mix these ingredients since it is gluten free there is no risk of overbeating the mixture.
- Squeeze all the excess juice from the apples and mix it with the above mixture. Now take a 9 inch round cake pan. Line it with parchment paper. Pour the above mix on it. Top it off with roasted walnuts.
- Bake it in the oven for about 45 minutes until the edges of the cake are brown. Remove it from the oven and let it cool for atleast an hour.
- For the sauce, take a sauce pan. Add coconut milk and sugar to it. Add a pinch of salt and vanilla extract and let it come to a boil.
- Now turn down the heat and let it cook for atleast 40-45 minutes until its thick and creamy.
- Let this mix cool. Pour it on top of the cake when it is ready to serve. Your delicious healthy dessert is ready to enjoy!!
