Oats Carrotcake Breakfast Bars

Oatmeal CarrotCake Breakfast Bars

Dry Ingredients:

- 2 1/2 cups Rolled Oats

- 2 tsp Cinnamon

- 1/4 tsp nutmeg powder

- 1/4 tsp sea salt

- 1 tsp baking powder

Wet Ingredients:

- 1 egg

- 1 cup Amond milk

- 1 tsp vanilla

- 1/4 cup coconut oil

- 1/3 cup maple syrup

- 1/2 cup grated carrots

Frosting:

- 1/2 cup Low Fat cream cheese

- 1/2 tsp vanilla

- 1 Tbsp maple syrup

Method: Preheat oven to 350 Degree F. In a large bowl, add oats, cinnamon, nutmeg, sea salt and baking powder. Mix well. In a seaparate bowl, add egg, milk, vanilla extract, coconut oil and maple syrup. Whisk it well. Now mix wet ingredients with dry ingredients. mix well. Add grated carrots. Pour this mixture to a 8x8 inch baking pan which is greased well and has a parchment paper in the bottom. Bake it for 35-40 mins. Keep an eye. Remove it from the oven and cool it for half an hour. Meanwhile for the frosting, using a hand mixer whip cream cheese, maple syrup and vanilla extract together. whip it till it forms a frosting like consistency. Add a little almond milk if you need. Now cut the cake into small rectangular bars and drizzle the frosting as you wish. Enjot these delicious bars in the morning
