No Bake Tiramisu

Ingredients: ½ cup hot espresso with 2 tbsp rum

- 12-15 lady finger cookies broken in half

- 2 large egg yolks

- 2 tbsp monk fruit sweetener ( you can use refined sugar as well)

- ½ tsp vanilla extract

- Pinch of salt

- ¾ cup or 6 oz mascarpone cheese

- 2 large egg whites

- Cocoa powder for dusting

- Dark chocolate for shaving

Method:

- Make a fresh cup of espresso and add rum to it. Mix it well. Pour it in a shallow bowl.

- Separate two large eggs in two large bowls. Whites in one bowl and yolks in the other.

- Add sugar or sweetener to the bowl with the yolks and pour 2 tbsp rum to this. Whisk this mix.

- Now make a double boiler and whisk the yolks well until pale yellow and thick. Whisk it continuously otherwise the eggs will cook. This step takes about 6-7 minutes.

- Take it off the boiler. Add mascarpone cheese, pinch of salt and vanilla extract. Mix well until all the clumps are smooth.

- Whip the egg whites in the other bowl until soft peaks form. Mix the yolk mixture with the egg whites and set aside.

- Now dip the lady fingers in the coffee mix. Don’t over do it. Place it in the side of the glass or the dessert bowl you are using.

- Add the mascarpone mix to the complete glass and dust some cocoa powder at the top.

- Shave some dark chocolate at the top and refrigerate for atleast six hours, so that it sets well.

- You can also layer the lady fingers and mascarpone mix alternately.

- Enjoy this easy dessert this holiday season!!
