Matcha Green Tea Cake with Orange Cointreau frosting
Falling in love with Matcha slowly but surely. I love teas but I was not a big fan of the matcha green tea coz of the taste. But off late I think my taste buds are thanking me for it 😃 I wanted to try a different cake and I couldn’t stop thinking of matcha. And since it’s FriYaY I added a tiny bit of Cointreau (optional) to the frosting 😃
Recipe Dry Ingredients - 1 1/2 cup of gluten free flour
- 2 tsp matcha green tea powder
- 2 tsp baking powder - pinch of salt - 1 cup brown sugar
Mix all the dry ingredients in a bowl. Sift it if you don’t want any lumps.
Wet ingredients - 3 eggs
- 3/4 cup milk - 8 tbsp butter - 2 tsp vanilla
Preheat oven to 350 deg F. In a large bowl, whisk all the wet ingredients properly. Add the dry ingredients slowly and whisk to blend. Take a non stick cake pan and spray coconut oil. You can use any oil. Pour the mix into the pan. Bake in the oven for 25 mins. Your yummy matcha cake is ready. Let it cool. Meanwhile we make the frosting.
Frosting ingredients - 8 tbsp butter
- 1 cup confectioners sugar - 2 tbsp Cointreau - 2 tbsp orange juice - orange zest
- 2 drops orange color
Put butter in the mixer. Beat it well and slowly add sugar while you beat it. Beat it for another 2-3 mins. Add Cointreau slowly with orange juice. Beat well. Add orange zest and two drops of orange color. Beat well. As it turns fluffy, you can stop beating. That means your frosting is ready 😃
Spread it over the cake and decorate it with some flowers. Your delicious cake is ready.
