Kimchi Chicken Ramen
Ingredients:
- 1 diced white onion
- 2 chopped garlic cloves
- 1-inch chopped ginger
- 1 tbsp oil
- 1 lb. boneless chicken
- 4 cups chicken broth
- 2 tbsp soy sauce
- 1 tbsp kimchi juice
- 1 cup kimchi squeezed and drained
- 2 tbsp Gochujang
- Ramen noodles boiled for two (Millet and brown rice ramen – Costco)
- 2 hardboiled eggs cut in half
- Thinly sliced scallions to garnish
Method: Take a heavy bottom pan and add oil. Let it heat and then add onions to it. Cook onions until translucent and then add ginger and garlic. Let it cook for a minute.
Add kimchi and mix it well with the onions. Add chicken pieces and mix again. Now add soy sauce, kimchi juice and chicken broth mix again. Add gochujang and mix well.
Bring it to a boil and cover it with a lid. Reduce the heat and let it cook for at least an hour. Now Preheat oven at 350 degree F. Take a baking sheet, remove the chicken from the soup and place it on the sheet. Brush it with some oil and bake it for about 10 minutes until golden brown.
Take a big ramen bowl. Place the noodles and kimchi pieces. Add chicken and then the soup. Top it with hardboiled eggs and garnish with scallions. Serve hot and enjoy!!
