Khao Suey
A traditional Burmese recipe. Its gluten free and filled with flavors. Since we don’t have any Burmese restaurants in Denver, we made this dish at home and its really delicious.
Ingredients:
- ¼ cup chopped onion
- 2 tsp chopped garlic
- 2 tsp chopped ginger
- 1 chopped green chili
- ½ tsp turmeric
- 3 Tbsp oil
- 1 bay leaf
- 5-6 black pepper
- 1 tsp cumin seeds
- 2 tbsp madras curry powder
- 1 tbsp gram flour
- 3 tbsp yogurt
- ¼ cup carrots
- ¼ cup mushrooms
- ¼ cup broccoli
- 1 cup water
- salt to taste
- 2 cups coconut milk
- 1 cup rice noodles
Method:
Heat oil in a nonstick pan. Add Bay leaf, black pepper and cumin seeds to it. Let it splutter. Add chopped onions, garlic, ginger and green chili to this and saute it. Cook it for 1-2 mins. Add turmeric and madras curry powder along with gram flour and salt to this and mix it well. Now add yogurt. Cook it for 1-2 mins. Add carrots, mushrooms and broccoli to the mix. Saute it for a minute. Let the vegetables be crunchy and not soft. Add a cup of water and bring it to a boil. As the water boils, add coconut milk to it and bring it to a boil and turn off the heat. Now boil some water in a saucepan and add a cup of rice noodles to it. Boil it till the noodles are al dente and strain all water. Rinse it under cold water. Take a bowl add the curry and noodles together with fried peanuts, boiled eggs, basil leaves, fried onions and fried garlic. You can use any accompaniments. Top it with chili flakes. Enjoy your meal.
