No Bake Kaju Katli cheesecake cups
Ingredients
For the Base:
1 cup digestive biscuits or graham crackers, crushed (Parle G works as well)
4 tablespoons unsalted butter, melted
For the Cheesecake Layer:
8 oz (225g) cream cheese, softened
1 cup heavy whipping cream
½ cup powdered sugar
½ cup Soaked Kaju paste(cashew paste)
A pinch of cardamom powder (optional)
50 gm White chocolate
20 gm fresh cream
For Topping:
Chopped Kaju for garnish
Edible silver leaf (optional)
Instructions
Prepare the Base:
In a bowl, mix the crushed biscuits and melted butter until well combined.
Press the mixture evenly into the bottom of serving cups or glasses to form the base. Chill in the refrigerator while you prepare the cheesecake layer.
Make the Cheesecake Layer:
To make the filling, melt white chocolate and mix fresh cream together until smooth to make a ganache.
In a mixing bowl, beat the softened cream cheese until smooth and add cashew paste with white chocolate ganache. Mix well.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gradually add powdered sugar to the whipped cream, mixing until smooth.
Gently fold the whipped cream into the cream cheese mixture until fully combined.
Stir in the cardamom powder (if using).
Assemble the Cups:
Spoon the cheesecake mixture over the chilled biscuit base in each cup.
Smooth the tops with a spatula and refrigerate for at least 4-6 hours, or overnight for best results.
Serve:
Before serving, garnish with extra chopped Kaju Katli and chopped nuts.
Optionally, add a touch of edible silver leaf for an elegant finish.

You can adjust the sweetness by adding more or less powdered sugar based on your taste.
