Guilt Free Almond Cookies
These Gluten free and No sugar cookies are so delicious. They are healthy and super yummy as well. I love having sugar once in a while but to suppress those cravings I like to eat my guilt free bites and these are amazing substitute to satisfy your cravings.
Ingredients
- 1 ¼ cup almond flour
- ½ cup flaxseed meal
- 2 Tbsp orange zest
- ½ cup ground pistachios
- 1 tsp vanilla extract
- 1 egg
- ¼ cup coconut oil
- ½ tsp baking powder
- 1/3 cup Truvia/ erythitol
- Pinch of salt
Method – Mix almond flour, flaxseed meal, baking powder and truvia in a bowl. In another bowl, whisk eggs, vanilla extract, orange zest and coconut oil together. Add a pinch of salt to the dry mix and mix wet ingredients to dry ingredients. Fold all the ingredients well until a dough is formed. You can use your hands to make a proper dough. Cover this mix and refrigerate for 1 hour. Preheat oven to 375 deg F. Take a baking tray and put a parchment paper on it. Remove the bowl from the refrigerator and make small balls with your palms. Place the balls on the baking tray and gently flatten them to make a cookie like structure. Place them in the oven for 10-12 mins until golden brown from the top. Remove them from the oven and let it cool for 15 mins. Sprinkle ground pistachios over them and some orange zest. Serve them with a hot cup of coffee or tea. Enjoy!!
