Brown Butter Choco-Chip Cookies (Gluten-Free)
Ingredients:
- ½ cup unsalted Butter
- 1 cup coconut sugar
- 1 tsp vanilla extract
- 1 egg and 1 egg yolk
- 2 cup almond flour
- 1 tsp baking soda
- Pinch of salt
- Dark Chocolate morsels
Method: Take a heavy bottom pan and add butter to it. Let it melt and as it is heated it will turn frothy. Let it be frothy and keep stirring. After few minutes, the yellow butter will start turning brown, keep stirring and when it is completely brown, remove from the flame and let it cool. Preheat oven to 350 degree F. Take a large bowl, add almond flour, salt and baking soda and mix well. Now in another large bowl. Add coconut sugar and cooled butter to it. Beat it for about 5-6 minutes and then add vanilla extract. Beat again. Add egg and yolk and beat for at least 6-8 minutes. Now add dry ingredients slowly and keep beating the mix. After all the dry and wet ingredients are mixed well, add the dark chocolate morsels and fold in well with the dough. Scoop with an ice-cream scooper and put it on a baking sheet lined with parchment paper. Bake the cookies for about 15 mins until golden brown. Let it cool and top it with freshly crushed sea salt. Enjoy these crispy cookies with a cup of coffee!
