Bombay Sandwich
Ingredients:
- GF Bread (I love Trader Joe’s Multigrain and whole wheat)
- 1 stick Butter
- 1 Beet root boiled and cut into slices
- 1 onion cut into slices
- 1 cucumber peeled and cut into slices
- 1 tomato cut into slices
- 1 potato boiled, peeled and cut into slices
- 1tsp chaat masala
- Shredded Mozzarella cheese
- Sev (Its made of chick pea flour and is gluten free)
For the mint chutney:
- 1 cup mint leaves
- 2 cups cilantro
- 2 garlic cloves
- 1-inch ginger
- 1 tsp cumin powder
- salt to taste
- 1 tsp Honey
Method: For the mint chutney, Add all the ingredients in a blender and puree it completely. Add water if you need. For toasting the bread, I used a traditional one which is used over a gas stove. But you can also use a panini maker to grill it well. Take two slices of bread. Chop off the ends. Butter up on each side. Now spread mint chutney on one side of each bread. Layer onion, beets, cucumber, tomatoes and potatoes. Sprinkle some chaat masala. Add cheese. Sandwich this with the other bread and grill it. Toast it well. Your yummy Bombay Sandwich is ready. Sprinkle a lot of sev on top of the sandwich and serve!! Enjoy it with a cup of hot Masala Chai.
